I was given this Caramel Popcorn recipe from my friend Celia. We needed to make a treat for a Cub Scout Pack Meeting and I thought it was so easy to make. At our pack meeting we were doing a movie theme and we thought it would be great to have popcorn. We knew the kids would get popcorn all over the gym so we decided to do Caramel popcorn instead. I have never made caramel popcorn and I am so glad I helped make it this time. It was so easy and yummy!
Caramel Popcorn:
2 sticks of butter (not margarine)
dash of salt
1 can sweetened condensed milk
1 tsp. vanilla
2 1/4 cup brown sugar
1 cup white corn syrup
Popcorn (I popped 5 bags of microwave popcorn)
In a saucepan melt butter. Add brown sugar, vanilla and salt. Stir in corn syrup and mix well. Add milk and cook over medium heat to apx. 210 degrees with candy thermometer constantly stirring.
*I do not own a candy thermometer so what I did was cook at medium heat, constantly stirring, until it came to a low boil. I then kept stirring for 3 minutes and then took it off the heat.
I like a soft chewy caramel corn, and this is what it will make. If you want a crunchier, harder corn then cook the caramel sauce a bit longer.
Add this caramel sauce to the popcorn. Stir well until all of the corn is covered in caramel and let cool. It is yummy warm too though if you can’t wait for it to cool off.
