Like many of you we are a super busy family. With both parents working, school, after school activities, homework and church activities our evenings are busy! I am sure I have told you this before – but some nights I feel like I am going crazy. It has been very important to me to find quick easy meals that I can make that my family enjoys. On the weekends I will make some more labor intensive meals but during the week it is all about quick and easy. Today I am going to share one of those recipes/lifesavers that is one of the best quick meals we have around here
I love how fresh these ingredients look! You will need the following:
1-1/2 Lb. boneless, skinless chicken (I used a rotisserie chicken so this part was super easy)
3 Cups Penne Pasta
1 Pkg (6 oz.) fresh baby spinach leaves
1/2 cup shredded Mozzarella cheese (I actually used more – we love cheese around here)

The directions on the box are super easy to follow
Start by heating your oven to 375 degrees then get your 13×9 baking dish ready by spraying in with some cooking spray.
Boil your penne pasta according to its packages instructions. While your pasta is boiling you can cook up your chicken or do what I did and just get a rotisserie chicken – this really helps speed up the process. Put the chicken in a bowl along with the Kraft Garlic Tomato Simmer sauce and mix together.
Once the noodles are done drain them and return to pot. Gently stir in fresh spinach leaves and the Creamy Three Cheese Baking Sauce.
Once mixed pour into your 13×9 inch baking dish
Next pour the Tomato Sauce/Chicken mixture into the dish
Sprinkle on the cheese – the recipe calls for 1/2 a cup but I used a lot more than that!
Bake for 10 to 15 minutes until the cheese is nice and melted. I like to serve this with some store bought breadsticks and salad. Yum!!
