Easy Slow Cooker Hawaiian Haystacks #SlowCookerMeals

I love cooking with my slow cooker.  In fact some nights when I am making a bigger meal I will use more than one slow cooker – I am a proud owner of 3 slow cookers and I find that I use all of them! I was looking for something to quickly put together and cook in the slow cooker today and my friend Katie shared this Hawaiian Haystacks recipe with me.  It is one of those recipes that is so simple it almost isn’t  recipe.  My family loved it!

Slow Cooker Hawaiian Haystacks

Easy Slow Cooker Hawaiian Haystacks

Ingredients Needed:

  • 3 Chicken Breasts
  • 3 Can Cream of Chicken Soup
  • Seasonings (I sprinkled my chicken with garlic powder, lawry’s seasoning salt and pepper)
  • Rice (I cooked up 2 cups of rice and had leftovers)
  • Toppings (my family likes Crunchy Noodles, Green Onions, Olives, Cheese, Pineapple and Mandarin Oranges)

Hamilton Beach sent me this Stay or Go slow cooker to try out with my recipe today and I am excited to share some of its features with you.

One cool feature on this slow cooker is the lid – it is a hinge lid!  So you don’t have to worry about setting your lid down, you just have to lift it up.  Just be careful to use a hot pad as steam escapes and can be quite hot.  It also easily slides out of the hinge for easy cleanup!

The contol panel is easy to understand and use. Push the on button, choose your heat setting by pushing the Temp. button (warm should not be used for cooking).  Then choose your hours by pushing on the hours button.   You can choose 2 hour increments and you can adjust the hours while cooking.  It also counts down as you cook in 2 hour increments – so if I start with 4 hours after 2 hours it would switch to the 2 hours on its own.  Once it has cooked for the time you set, it automatically changes over to warm.

So let me show you how easy this recipe is to make.  Place your chicken breasts into your slow cooker.  I season each side with onion powder, season salt and pepper.

Add in your Cream of Chicken soup.  If you don’t want to used the canned crem of chicken soup I know there are a lot of recipes out there for homeade cream of chicken soupo.  I personally am okay with canned Cream of Chicken soup – it helps me out when I am in a hurry.  Make this with the homemade or canned depending what is best for you and your family.

Tip: You can make a smaller or larger amount of sauce.  The ratio is one can of soup per chicken breast.

Close your lid and cook on low for 8 hours or high for 4 hours.

15 minutes before the chicken is ready I cook my rice and prep/chop my toppings.  You can have all sorts of toppings.  My family loves cheese, chinese crunchy noodles, green onions, olives, pineapple and mandarin oranges.

Remove the chicken breasts into a bowl to shred.  To shred quickly just use your mixer and you will have shredded chicken in less then 20 seconds.

Put the chicken back into the sauce and mix until it is nicely incorporated into the sauce.

This is perfect for nights I have family coming and going at dinner time because the sauce can be kept nice and warm in the slow cooker.

Serve over rice and add your favorite toppings.

    We still have a ton of apples left from our apple orchard. I’d use the slow cooker to make apple sauce! So much easier than cooking it on the stove.
