This grilled vegetables recipe is so easy and delicous to make. It is something that you can easily throw together to go along with your Barbecue or tailgaiting party. I pick out some of my favorite vegetables for this recipe. Sometimes I grab vegetables that are on sale that week or whatever sounds good to me at the time.
Grilled Vegetables
Ingredients:
- 1 to 2 Tbsp of Olive Oil
- Coarse Salt (to taste)
- 1-2 cloves of Garlic (I use the Gourmet Garden Chunky Garlic - so this would be 1 to 2 Tbsp.)
- Mushrooms
- Your favoritie veges! For todays recipe this is what I used:
- Red Potatoes
- Onion
- Green and Red Pepper
First wash and cut your small red potatoes in half. I like to parboil the potatoes so it cooks faster on the grill. I just boil them for 5 minutes.
Washed and cube the rest of the vegetables and mushrooms and place in a bowl. When the potatoes have boiled for about 5 minutes drain them and add them to the bowl. Next add the olive oil, Sea Salt and Garlic and made sure everything gets coated.
I was sent a new "toy" to play with on my Barbecue from Mr. Bar-B-Q. They sent me a grilling skillet and I was excited to try it out. So once my Barbecue was heated I put the grilling skillet on the grill and put the vegetables in. After using this a few times now I have found that I just LOVE it!
One of the reasons I love the Grilling Skillet is that I think it is a good way to cook my vegetables on the grill without worrying about them falling through the cracks. Also the handle is an easy on/off handle which is perfect so the handle doesn't get hot while things are grilling.
I just take the handle off and then put it back on whenever I need to shake or stir things up a bit.
Close the lid of your grill and check on it/stir it every 5 minutes or so until the potatoes are done. I check to see if the potatoes are done with a fork - if it goes in/out easy and feels like it is getting softer than I know it is ready.
This is about 15 minutes in and it looks ready to enjoy!
