I am a super busy mom – who isn’t? So it is very important for me to make good family meals that do not take much time. Sometimes we don’t have much time in between getting homework done to running to the kids activities so I need to have something quick that we can make up that is still delicious and filling. I especially love this fun recipe that I make using Tyson Chicken.
The secret to making this recipe into a yummy quick family meal is using items that have mostly already been prepped for me. So when I ran to the store I made sure to buy pre-shredded cheese, fruits that needed only a quick wash, and Tyson BBQ chicken that only takes 20 minutes in the oven (less than 4 minutes in the microwave).
For this recipe I purchased Tyson Honey BBQ Chicken Strips. They are located in the freezer section. I found mine next to the anytizers and hot pockets. They had a variety of other chicken strips as well – like plain and Buffalo.
I grabbed a few more items to complete my meal then headed home. Keep a look out in your Walmart for Tyson chicken demos!
For this recipe you will need the following:
Tyson Honey BBQ Chicken strips
Cheese (I used a Mozzarella and Provolone mix)
Fresh fruit (we love grapes, apples and strawberries)
Edamame (I like to have a quick vege on hand – and edamame is very healthy and very quick to make)
Before I continue with the rest of the recipe let me tell you about Edamame – I really like it and I can usually get my kids to eat it as well. Edamame are soy beans. I usually cook mine up one of two ways. First way is to boil in water according to package directions, drain and then toss with sea salt. The pods are not edible – you pop the beans out and enjoy those. The second way I cook these is to cook just the beans. I toss them with a bit of olive oil, Parmesan cheese and salt and pepper. I can cook these at the same time as the chicken because they both cook at 400 degrees – the chicken cooks for 20 minutes and the roasted edamame cooks for 15 minutes – so it is perfect.
Back to the Wrap
Bake your chicken in the oven according to package directions (it is 20 minutes at 400 degrees). You can make the chicken in the microwave as well if you are in a big hurry. While the Chicken is cooking get all of your items ready so your family can assemble their wrap. Get your Edamame cooking, wash your fruit and Romaine lettuce leaves. Get out your tortillas, ranch dressing and cheese.
Take a tortilla and spread on the ranch, then add your romaine lettuce leaf, chicken and cheese. If you do this right when the chicken comes out of the oven it will melt your cheese – yum!
Roll up your tortilla and grab some fruits and veges to go with it. Here is my daughter grabbing her plate to carry over to the table.
I love the way all of the flavors taste together. BBQ and ranch taste so good together, especially with the yummy cheese!
Since making this recipe my kids and husband have asked for it several times. It is a great after school snack as well. My son sometimes after school will run and make himself a quick wrap by cooking up the chicken in the microwave.
