Earlier this week I shared my Austenland Movie Night party Ideas – at that party I served some Chicken Salad Sandwiches and my friends at the party asked for the recipe. So I promised to share this Simple Recipe for the Lime Chicken Salad Sandwich here on Summer Scraps.
Simple Recipe: Lime Chicken Salad Sandwiches
I first tasted these Chicken Salad Sandwiches at my cousin Lori’s home and I just had to beg for the recipe. The recipe is her sister (my cousin) Kerri’s – I have tweaked it just slightly.
- 3 cups Chicken – Shredded (most of the time I use a Rotisserie Chicken)
- 1 1/2 cups Grapes (seedless) – Halved
- 1/2 cup Celery – Diced
- 1 bunch Green Onion – Thinly sliced
- 1/2 cup – 1 Cup Cashews
- 1/2 cup Mayonnaise
- 1/4 tsp. Salt
- 1/4 tsp. Pepper
- 1/4 tsp. Lawry’s Seasoning salt (the original recipe uses poultry seasoning but I never have it around and like this just as well)
- 1/8 tsp. Onion powder
- 1 1/2 tsp. Lime Juice (the original recipe calls for lemon juice – and it is great – but I love the zing from Lime)
I first make the dressing so the flavors can start melding together. Once the dressing is mixed put it in the fridge until you need it.
In a bowl put the chicken, grapes, celery and green onion. Don’t add the cashews yet. I don’t like to add the cashews until right before it is time to make/eat the sandwiches. I think it helps keep them a bit salty and not soft.
Pour the dressing all over the chicken mixture and stir well. Place back into the fridge until you need it.
Right before you want to eat mix in your cashews and spoon onto croissants – then serve. You could prep this for a party and make your sandwiches before hand – it is just one of the last things I do before the party. For my party this made enough for 16 mini croissants – so it would be enough for 8 big croissants. If you need more this can be easily doubled – or tripled!
