Roasted potatoes make the perfect side dish. You can change up your pototates with different herbs but have you ever thought of changing the oil you use to an oil with flavor? That is what I am doing today. I received some bottles of Acala oils to try out and I am so excited to see how the Cumin oil flavors the roasted potatoes.
Spicy Roasted Potatoes
Ingredients:
- 2 1/2 Tbsps. Acala Cumin Oil
- 1 Tbsp Gourmet Garden Garlic (or you can use 1-2 large cloves garlic minced)
- 3/4 tsp. salt
- 1/4 tsp pepper
- 1 1/2 pounds red potatoes (use babe potoates that are about 1 to 2 inches big or if you have bigger red potatoes just half or quarter them)
- 4 – 5 ounces of pearl onions (my store sells 10 oz bags so I just used half the bag – you can also use frozen pearl onions if you thaw them first)
Preheat your oven to 400 degrees F. Next place the Acala Cumin oil in a small bowl. Add your garlic, salt and pepper, mix together then set aside.
Let me take a moment to tell you about the oil Acala Farms sent me. They have flavor infused cottonseed oil and I received the Chili Cumin and Fresh Cilantro. You can visit their site to learn more about Cottonseed Oil.
They have so many flavors that I want to try. I really want to try the Fried Shallot and Roasted Garlic – plus the Jalapeno Lime, Smokey Chipotle and Hot Habanero sound great!
Okay back to the recipe – Put your potatoes and onions in a 9×13 baking dish. Drizzle with the oil and stir around until everything is coated evenly.
Bake for 30 minutes and stir the potatoes and onions. Cook another 20-30 minutes until potatoes are fork tender and the onions are soft and beginning to carmalize.
Remove from oven and serve.
These are super flavorful and delicious. They are hot and spicy – spicy in a wonderful delicious good way – but I had to drink some milk with them to keep the fire at bay.
