Today I am sharing with Summer’s readers one of my favorite soups. I can eat soup every day. I love that I can make a slow cooker minestrone soup and dinner is done. I can bake a loaf of bread or some garlic toast and that’s it, or just pair it with some crackers for lunch. Easy Peasy.
Slow Cooker Minestrone Soup
Now this recipe has lots of ingredients so it is a little complex, but with all the flavors in it, you will see it’s worth it. This is also a lower calorie soup and you can use vegetable broth instead of chicken broth and make it vegetarian. The store was out of low sodium Vegetable Broth so I went with the low sodium Chicken Broth. There really is little work to do, just several spices and chopping some veggies.
This can be made on the stove top just as well, but you will need to watch it. This would be great to make in an hour or two if your in a hurry or leave it on during the day while you work, for up to 8 hours. This recipe also has spinach in it. You can use fresh or frozen. I am doing several recipes this week with spinach, I guess I need my green leafy veggies. I cook the pasta right before and add it to soup so it’s al dente and won’t soak up all the broth.

This soup is very hearty and filling. Great for a cool winter night or weekend.
