Chocolate Caramel Pecan Pastry

Tomorrow is National Caramel day.  To celebrate I am sharing a favorite caramel recipe along with some amazing food bloggers – see all of the recipes at the end! The recipe I decided to share is my Chocolate Caramel Pecan Pastry.  Such a perfect melding of delicious flavors!

 Chocolate Caramel Pecan Pastry

I just love using frozen puff pastry in my recipes because it is so easy to work with.  Make a few cuts in your puff pastry to create squares and in no time you have a delicious pastry to serve for dessert.  These delicious pastries have a yummy layer of caramel and pecans and then drizzled with melted chocolate – so good!

Ingredients:

    • 1 package caramel squares or caramel bits
    • 1/3 cup Whipping Cream
    • 1/2 cup chopped pecans
    • Chocolate chips
    • 1 package frozen puff pastry (2 sheets), thawed
    • 1 egg
    • 1 Tbsp. Water
    • Sugar
Let your frozen puff pastry thaw (about 20-30 minutes), unfold and cut into squares. Line your baking sheet with parchment paper (makes easier clean up).

Create an egg wash by whisking together the egg and water in a small bowl. Brush the egg onto each of the edges of your squares.  Sprinkle sugar over each pastry square.

Bake in a 400 degree oven for 14 minutes.

The pastries puff up in the center so I used a back of a spoon to push down each center.

Now it is time to get the caramel ready.  I used packaged caramel – my favorite is Kraft Caramel Bits.  Place the caramel bits in a microwave safe bowl and add 1/3 cup of whipping cream.

Microwave for 2 minutes stirring every 30 seconds.  The caramel will slowly melt.  The last time out of the microwave you will need to stir for a bit for everything to melt and incorporate.

Add 1/2 cup chopped pecans and stir.

Now fill each of the pastries with the caramel.

Melt your favorite chocolate chips and drizzle over the pastries.

These are delicious both warm and cooled down – my family can’t wait to gobble them up!
