Today is national cookie day! Not much is better than that, right? To celebrate all of the delicious cookies I am teaming up with some amazing bloggers to share some yummy cookies with you today. (Check out all of their cookies at the end) So I thought I would share with you a simple and fun Dipped Chocolate Chip Pizzelle Cookies!
Dipped Chocolate Chip Pizzelle Cookies

These really are so quick and easy to make! I bought my Pizzelle pro because of how fun these cookies look to make. I have used it several times and it is always so easy to make and oh so quick!
Just make up your dough recipe, add in your chocolate chips and add your batter to the Pizzelle pro for about 40 to 50 seconds and you have cookies!
I have to admit at first I wasn’t sure how much dough to put on the iron. If I did too little (like just a teaspoon) the dough would not make a full cookie (although it was still delicious)
However, if I put on too much (like a big teaspoon full) it would overflow.
I could never get it perfect so for me too much is what I went for. When the cookies come off the iron they are hot and bendable. While they are still warm I just break off the excess cookie. These are the ones that had all the excess dough in the picture above
I love how pretty the designs are on the cookies – looks so fancy and gives the cookie a nice crispy texture
Once your cookies are all made just dip in melted chocolate and add some chopped nuts. How easy is that!
Let cool and store in an airtight container if you have any left!
I love the crispy texture paired with the cream chocolate. Just imagine the possibilites of all of the variations of this cookie that you could make.
- 3 Large Eggs
- 1 cup Sugar
- 2 tsp. Vanilla Extract
- 1 stick (1/2 cup butter) melted and cooled
- 2 cups Flour
- 11/2 tsp. baking powder
- ½ cup Mini Chocolate Chips
- Dipping Chocolate
- Chopped nuts
- Melt your butter and set aside.
- Beat the eggs and sugar together. Add the butter and vanilla to sugar mixture.
- Sift together the flour and baking powder. Add ½ of the mix to the sugar mixture and mix. Add the remaining flour and mix.
- Stir in mini chocolate chips.
- Heat the Pizzelle iron according to the directions. Place 1 tsp. of batter on the grid. Bake until golden brown (30-40 seconds).
- Remove and cool.
- Dip in chocolate and sprinkle with nuts.
- Let chocolate cool and store in air tight container.

These are gorgeous! I’ve never had a pizzelle cookie, but now I’m adding the pan to my wish list. Although, it could be pretty scary to be able to have fresh cookies in under 45 seconds. 😉

I love pizzelles and I seem to only make them at Christmas. I do the traditional ones so these look so much better.
