I am a busy mom. Oh so busy – who isn’t these days? I spend most of my day at work and then working on the blog. Then I am off to carpool for the kids. Each of my 3 kids are at 3 different schools so afternoon carpool can take me hours sometimes. After school we have sports and tons of homework. In the midst of it all I need to make dinner. My Simple Chicken Salad Sandwiches are such a time saver for me.
In order for me not to go crazy I need to have dinner ideas that my family loves but that also won’t stress me out. I MUST have dinner ideas that take no time – or less than 20 minues to put together. This one is perfect!
I know everyone has their favorite recipe, this is mine!
Simple Chicken Salad Sandwiches
Ingredients Needed:
- 1 fully cooked rotisserie chicken – the kind at Walmart are the perfect size! (about 3 cups shredded chicken)
- 1/2 cup celery diced
- 1/3 cup green onions thinly sliced (abou 4 t0 5 green onions)
Dressing:
- 1/2 cup mayo
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. season salt
- 1/8 tsp. onion powder
- 1 1/2 tsp lemon juice
I first like to mix up the dressing so the flavors all have time to meld. Add all of the dressing ingredients together into a bowl, mix, then place in the fridge for when you need it.
I just love using rotisserie chicken in my recipes that call for shredded chicken – it is such an easy an inexpensive way to get shredded chicken.
I first remove the legs and wings. My daughter does not like chicken salad so I like to have some chicken legs for her to eat. For this recipe I use the breast meat any other dark meat tha is easy to get to. This takes me less than 5 minutes to remove the chicken from the bones.
I set the chicken legs aside for my daughter then put the rest of the chicken meat in a bowl and shred it with two forks. Takes only minutes to shred. You can pull out your mixer and “mix” the chicken. It really works great and fast – like shredded chicken in 20 seconds.
Into the bowl add your diced celery and onions and dressing.
Mix this all together and you have a simple and delicious chickne salad. If I have time and want to be extra fancy I will sometimes add a cup of sliced grapes and about 1/2 a cup of cashews – yum!
Put the chicken salad on croissants or your favorite rolls.
On the way home of my forever long carpool there is a Walmart. I love this Walmart because it is in walking distance of my home. I don’t even have to go through a trafficelight to get to it. It is so convenient for me to stop there on the way home from carpool, grab a meal deal and make a delicious meal for my family. You can easily see on the signs what is included in the meal deal. It makes it easy to find and plan your effortless meal for the night!
Let me tell you a little about the Walmart meal deals. The one I went with for this recipe is the Marketside Rotisserie Chicken Meal. This meal deal has a Rotisserie Chicken (29 oz.), 2 lb. Side (Potato Salad, Macaroni Salad, or Cole Slaw), and a 2 Liter Coca-Cola product. This meal deal only comes with 1 2 liter. I bought a second one because I just LOVE my coke.
You can also get the Marketside Pizza Meals. It comes with a 16″ pepperoni pizza or 16″ five cheese pizza and 2 Liter Coca-Cola product.
I grabbed red skinned potato salad and sprite for the kids and coke for me to enjoy.
Add a side of fresh fruit like grapes or apples and you have a wonderful meal for you family to enjoy that takes less than 15 minutes to put together. Now that is my kind of meal!

This looks so good and this recipe is pretty simple! I’m not a fan of onions so I would probably leave them out and add grapes like you suggested. So yummy!

I love chicken salad! I keep hearing that rotisserie chicken is really cheap and easier to make lots of food with. Our Wal Mart’s deli is right next to the entrance so I smell that deliciousness right away, haha. =)
